Farm Story
This community lot comes from the Nuevo Oriente region, known as the birthplace of the native Pache variety. Centered around Pache, it also includes traditional local varieties such as Catuai and Pacas, offering a flavor profile that reflects the unique terroir of the area. Surrounded by mountains famous for silver and jade, the region presents a dry, desert-like landscape—yet hidden within it lies a coffee paradise. The distinct flavors are rooted in the mineral-rich soil and the farm’s high altitude, which reaches around 2,000 meters. The area is home to the indigenous Xinca people, alongside many European-descended settlers, which is reflected in the producers, many of whom exhibit European features.
About this lot
This year’s dry-washed community lot comes from the town of Colis in the Nuevo Oriente region. The coffee was harvested from four farms—El Pinal, El Chorro, La Brea, and San Antonio—all located within the same community, faithfully expressing the terroir of the region.
Primarily made up of the native Pache-Colis variety, the lot also includes Catuai and Pacas, all regional heirloom varieties. Fermentation was carefully managed at a pH of 3.7 and followed by 22 days of sun-drying in a greenhouse, bringing the final moisture content to 11.7%. The result is a cup with notes of green apple, Darjeeling tea, maple syrup, walnut, and hazelnut. It features a natural sweetness and citrus brightness typical of high-altitude coffee, delivering a clean, well-balanced cup.
